DEVELOPMENT OF TROPICAL FRUIT SMOOTHIE

ABSTRACT

 

Smoothies are thick shake type drinks filled mainly with fruit or vegetables and other nutrient dense ingredients. They make wonderful options for a meal or a snack when made with natural items. Smoothies are one of two things, a healthier sweet treat, or for those die hard raw food fans, they are a healthful way of getting an intense shot of nutrients. The best smoothies are nutrient-dense, providing vitamins and oils necessary for good nutrition. In the present study, banana and pineapple smoothie was prepared with different additives as honey and cinnamon. These prepared smoothie samples were studied for their nutritional content and shelf life study. Also, sensory evaluation was conducted. This analysis revealed that addition of these ingredients not only increased nutritional qualities but also its overall acceptability. It was seen that the prepared smoothie can successfully be stored for 14 days after pasteurization at 72C for 15s and at refrigerated conditions of 4 1C.
